Cheers to Ten Years – Sun King's 10th Anniversary



It’s hard to believe it’s been ten years since we fired up our original brew house and made our first batch of beer, Johan the Barleywine – named in honor
of a dearly departed friend who had been instrumental in both Dave and my development as professional brewers. In the months and weeks leading up to
that moment, we had been working 15-18-hour days doing everything we could to convert an old warehouse on the edge of Downtown Indy into a functional
production brewery. Our capital was running low and we needed to start making and selling beer before it all came to an end before it even really began!



Looking back on it all now, it’s seems crazy to how much has changed, not just for Sun King, but for Indianapolis, and particularly for Indy’s beer scene.
To put it all in perspective, in 2009 there were less than 30 breweries in the entire state, most bars had between three and six taps – if they even
had draft beer at all – and craft beer had eked out a meager 5% market share – which includes all craft brewers from across the country – with Indiana
breweries accounting for around 1%. Indianapolis did not have a production brewery and you could hardly find local beer anywhere outside of a brewpub,
and greater Indianapolis only had seven or eight of those. And for a broader perspective, there were less than 2,000 breweries in the entire United



Fast-forward to 2019 and there are over 150 breweries in Indiana, with nearly 50 of them in Indianapolis! The average bar with draft beer has a dozen taps,
with a lot of them bosting 20, 30, or 40+ beers on draft. Craft Beer has grown to command a 10% market share in Indiana, with beer from Indiana Breweries
making up about 3% of total sales. And the U.S. now has more than 7,000 breweries. That is an incredible and massive shift over the course of a decade,
and we at Sun King are very fortunate to have been a part of it all.


It is commonly said that 96% of businesses fail within ten years, so when I think about that statistic alongside how much the world and beer industry has
change, I am incredibly grateful to be celebrating this milestone. It has not been an easy task or a smooth ride, but thanks to a team of intelligent,
talented and hardworking people we have been able to make smart decisions in order to grow, adapt, and change with the times. We often say, “Why let
good stand in the way of being great,” and while it sounds cliché, I believe cuts to the core of our goal to strive to be the best – whether it be
in regard to making beer, running a business, creating a great workplace and taking care of our employees, or being a great community partner. We also
like to remind ourselves that “When you’re green you grow and when you’re ripe you rot,” which serves as a reminder that we must continue to innovate
and create new opportunities in order to stay relevant and continue to run a successful business. It is these philosophies that I believe have helped
guide us and allowed us to be successful over the years.



These last ten years have gone by in a flash, although sometimes it feels like a lifetime. From our original brewery/tap room in downtown Indy featuring
a small walk-in cooler that had eight taps and three folding picnic tables for guests to enjoy samples of beer – If you didn’t see it then, you wouldn’t
believe it from visiting today – to three location that include a Small Batch Brewery in Fishers that allows us to create new beers, and a Distillery/Tap
Room/Food Hall in Midtown Carmel, with a Tap Room at Indianapolis International Airport on the way. None of which would be possible without all of
you who love what we do and continue to seek out and enjoy Sun King and share it with your friends. To all of you I want to say, THANK YOU from myself,
my partners, and the 60 full-time and 120+ part-time people that make work hard to make Sun King work.

8th Annual Collect Your Tabs Challenge benefitting the Ronald McDonald House of Central Indiana

It’s that time of year again! Time to start collecting your tabs for our 8th Annual Collect Your Tabs Challenge, benefitting the Ronald McDonald House Charities of Central Indiana!

We challenge you to collect aluminum tabs of all types and turn them in for various Sun King prizes. Join forces with your co-workers, family, and friends to collect as many aluminum tabs (beer, soda, energy drinks, canned water) as you can now until Saturday, July 20th, 2019. All collected tabs can be turned in on Saturday, July 20th at any of our Sun King locations (Downtown IndyFishers Tap Room, or Sun King Spirits in Carmel). Those who have participated will be awarded various Sun King prizes (see below). All of the collected tabs will be dropped off at the15th Annual Pop Tab and Coin Drop on Monument Circle on Friday, July 26th (11am-2pm) and then the RMHCCIN will recycle all collected tabs!

Why Should You Collect Can Tabs?

Not only is the can tab important for the purpose of opening your favorite Sun King beer, it is also a valuable resource that generates much-needed funds
to cover the operating costs to run the Ronald McDonald House to support families in need. Don’t forget to recycle your cans too – that is important
for our environment!

What does the Ronald McDonald House Charities of Central Indiana do?

Nearly 5,000 families are served at the two houses each year while their children receive life-saving treatments at Indianapolis-area hospitals, including
Riley Children’s Hosiptal. The Houses offer all of the comforts of home including restful places to sleep, spacious kitchens and dining rooms,
play areas, a library, laundry facilities, and more.

Volunteers from the community prepare home cooked meals for breakfast and dinner daily in our spacious kitchen and a well-stocked pantry provides staples
for guests to prepare their favorite lunch or snack.

With support from local McDonald’s owner/operators and community donors, RMHCCIN is also able to offer scholarships to high school seniors facing limited
access to educational opportunities.

Funds received from the recycled tabs adds up to $30-$50K annually. These funds go towards the operating costs of the Ronald McDonald House and will
cover the costs of operating 3 rooms in the House for an entire year.

How Can You Help?

Help Sun King collect tabs by participating in the Save Your Tabs Challenge now until July 20th, 2019. Sun King will continue to collect tabs at various
community events around town. Be sure to drop off your collected tabs on Saturday, July 20th, at any Sun King location (Indy, Fishers, Carmel).

We will weigh your tabs and reward you with prizes, and then we’ll deliver the collective bounty of tabs to RMHCCIN where it will go to help those
in need.

Cooking with Sun King Lupulin Astronaut Spicy Tofu Lettuce Wraps

We’ve all set on intentions for the year and our resolutions are underway. If one of your resolutions is to eat healthy, then you’ve got to try this recipe.Sun King’s Culinary Director, Steven Unrue, wiped up a tasty eat that any vegetarian or meat lover will devour – Lupulin Astronaut Spicy Tofu Lettuce Wraps!

The tofu has a sweet, spicy, tangy failover that the IPA hops in the beer play well with. The sauce adds depth and a little sweetness. The herbs in the garnish tie it all together. We hope you enjoy!

Lupulin Astronaut Spicy Tofu Lettuce Wraps

Total Time: 30 min (Active Prep Time: 30 mins)


Servings: 4 


For the Tofu:

  • 1 pound extra-firm tofu, sliced 3/4 inch thick
  • 2 tablespoons vegetable oil
  • 1 Fresno chile, thinly sliced
  • 3 tablespoons soy sauce
  • 2 tabelspoons mirin
  • 2 tablespoons Sriracha or gothujang (Korean hot pepper paste)
  • 2 tablespoons unseasoned rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon finely grated fresh ginger

For the Sauce:

  • 4 tablespoons low-sodium soy sauce
  • 4 tablespoons hoisin sauce
  • 1 oz Lupulin Astronaut IPA
  • 1 to 2 teaspoons vegetarian chile sauce, such as vegetarian sriracha

To Serve: 

  • 16 butter lettuce or iceberg lettuce leaves
  • 1 English cucumber, diced
  • 1/2 cup chopped green onions
  • 1/2 cup chopped fresh Thai basil
  • 1/2 cup finely chopped peanuts


For the Tofu:

  1. Arrange tofu slices in a single layer on a paper towel lined plate and cover with a few more paper towels. Press down firmly on tofu with your hands to
    expel excess liquid.
  2. Heat vegetable oil in large skillet, preferably cast iron. Cook tofu, turning once, until browned. 7-10 minutes total.
  3. Transfer to plate and let cool.
  4. Meanwhile, whisk chile, soy sauce, mirin, Sriracha, vinegar, sesame oil, and ginger in a medium bowl to combine.
  5. Crumble tofu into small pieces and add to bowl; toss to combine.

For the Sauce: 

  1. Mix soy sauce, hoisin, Lupulin Astronaut, and chili sauce until combine.

To Serve:

  1. Place lettuce leaves on platter, and set out garnishes in small serving bowls. Let guests wrap tofu mixture in lettuce leaves, and top with their choice
    of garnishes and sauce.

Pairs well with a pint or can of Lupulin Astronaut IPA.

Cooking with Sun King Taco Tuesday Pork Puffy Tacos


This ain’t your normal Taco Tuesday recipe! This pork puffy taco recipe will send your tastebuds into overdrive. Invite your friends over for dinner! This
recipe feeds six. Pair these with Foxy Jam Pants and your Taco Tuesday will be a huge success.



Foxy Jam Pants Puffy Pork Tacos


Total Time: 1 hr 15 min (Active Prep Time: 1 hr)


Servings: 6





For the Shells:


1 pound fresh masa for tortillas or 1 1/2 cups of masa carina mixed with 1 cup Foxy Jam Pants and left to rest, covered, for 15 minutes

Peanut or canola oil, for frying

Kosher salt


For the Filling:


2 tablespoons canola or vegetable oil

1 cup finely chopped white onion (about 1 medium onion)

3 tablespoons finely chopped seeded jalapeños (about 2 medium peppers)

1 tablespoons freshly minced garlic (about 3 medium cloves)

2 tablespoons chili powder

1 tablespoon Mexican oregano

1 tablespoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon chipotle powder

2 pounds ground pork

1 cup Foxy Jam Pants

1 cup finely chopped fire-roasted tomatoes from 1 (15-ounce) can, drained

1/4 cup finely chopped fresh cilantro leaves and tender stems

1 tablespoon fresh juice from 1 lime


For Serving:


1/2 head iceberg lettuce, shredded

6 ounces grated Longhorn cheddar, mild cheddar, or Monetary Jack cheese

1 small white onion, finely diced

2 Roma tomatoes, seeded and finely diced

Sour cream for serving




For the Shells:


Fill a wok or Dutch oven with 2-3 inches oil and heat to 375 degrees over high heat. Pull off a 2-tablespoon-sized piece of masa and form into ball. Press
dough into a thin round between two sheets of plastic wrap in a tortilla press or roll out using a rolling pin. 


Place masa in hot oil and let cook until it floats and puffs, about 10 seconds. Using a metal spatula carefully press middle of tortilla down to create
a taco-shell shape and hold until form sets, about 10 seconds longer. Using the spatula, gently submerge one side of shell into oil and cook until
crisp, 10-15 seconds. Repeat with other side. Remove shell from oil and allow to drain, then transfer to a paper town lined sheet pan, season with
salt to taste, and repeat with remaining masa. 


For the Filling:


Heat oil in 12-inch skillet over medium-high heat until shimmering. Add onions and cook until softened and beginning to brown around the edges, 5-7 minutes.
Add jalapeños and garlic and cook until fragrant, about 30 seconds. Add chili powder, oregano, cumin, coriander, and chipotle powder and cook until
fragrant, about 30 seconds. Add ground pork and cook, breaking apart with wooden spoon or potato masher, until browned throughout, about 5 minutes. 


Stir in Foxy Jam Pants and diced tomatoes and bring to a boil. Reduce to a simmer and cook until liquid thickens, about 15 minutes. Stir in cilantro and
lime juice and season with salt to taste. 


Spoon meat mixture into taco shells and top with lettuce, grated cheese, onion, tomato, and/or sour cream. Serve immediately.

Community Partner Spotlight: Volunteering with Keep Indianapolis Beautiful

Keep Indianapolis Beautiful continues to impact the revitalization of the Indianapolis community year after year and, because of this, Sun King is proud
to partner with them on numerous volunteer events and gatherings!

Last year alone, more than 11,500 volunteers were able to help clean neighborhoods in the Indianapolis area. Throughout 339 organized cleanups, KIB was
able to remove over 900 tons of waste materials and trash from Indianapolis streets. Sun King is delighted to volunteer and partner with such a great
organization that gives back to the Indianapolis community in many different ways.

This past week, representatives from JP Morgan and other Indianapolis community members attended KIB’s most recent volunteer event, Happy Hour Weeding.
Abby Dennis, KIB’s volunteer manager, says sometimes they can get so preoccupied with cleaning up Indy that they can forget about cleaning up their
own backyard!

Volunteers helped weed the surrounding area of KIB’s offices and weave in beautiful patterns onto one of the fences for beautification – all while getting
to enjoy a nice pint of Sun King after completion! “Whether it’s a surprise gift card, growlers after Happy Hour Weeding, drinks at our appreciation
dinner or VIP access to your events, we’re able to thank our volunteers in special ways because of our partnership with Sun King,” director of marketing
at KIB, Ashley Haynes, said.

Gen Con 2018 and Everlasting Gamer

July 4thand all its glory has past and we are officially in the dog days of summer here in Indianapolis. Gone are the vibrant fireworks lighting
up the nighttime sky even though the unbearable heat and humidity continues to linger around.



As we close the book on July, however, August starts off with a massive BANG here at Sun King – courtesy of none other than Gen Con, the premier gaming
convention in the United States. Since 1968, Gen Con has provided North America with the largest gaming convention around and 2018 looks to be no different.
While at the convention be sure to keep your eyes open for hundreds of exhibiting game companies, great food, award-winning artists, and countless


This year Gen-Con will be held on August 2nd– 5that the Indiana Convention Center with Sun King conveniently located outside on Georgia
St. and on South St. for all of your “Official Gen-Con Beer” needs.



Being the official beer of Gen Con is a big honor that does not get taken lightly here at the brewery. Our passion for satisfying the loyal fans of Gen
Con is as intense as always. This year we will be releasing Everlasting Gamer, an American Amber Ale. We hope you will join us for a free (no badge
needed), all-ages, kick-off event on Wednesday, August 1ston the West Block of Georgia St. Live music from Local H and Brother O Brother,
