Cooking with Sun King Winter Recipe Finalist: Wee Sir-an Meat Coma

To get your grills fired up, we thought that we would share Jake Koeneman’s recipes, one of our Top 5 Finalists from our Winter Recipe Contest. Jake made delicious Osiris bacon brussel sprouts partnered up with Wee Muckle drizzled steak.

1 1/2 pounds of Goose the Market Sirlion
1 pound of Brussel Sprouts, cut in half
1/2 pound of thick cut Bacon, chopped
1/2 White Onion, diced
1 can Wee Muckel
1 can Osiris

Pour 4 ounces of Wee Muckle into shake pint glass.

Pre-heat grill on medium heat.

Start pan on stove-top burner at medium heat. Dice bacon and add to pan. Cook bacon until crisp. Once bacon is finished, drink 2 ounces of Wee Muckle and place steak on warmer rack in grill.

Place brussel sprouts in the remaining grease and sear on both sides. Approximately 5 minutes.

Drink remaining 2 ounces of Wee Muckle and flip sirloin.

Pour 8 ounces of Osiris in pan with brussel sprouts, pour other 8 ounces in shaker pint. Simmer brussel sprouts in Osiris until beer reduces to a glaze. Stir occasionally. 12-15 minutes

After 5 minutes, flip steak on grill and check to make sure that it is not getting charred.

After brussel sprouts simmer for 10 minutes, pout 6 ounces of Wee Muckle in sauce pan and begin reduction. Once reduction starts, flip steak again.

Continue drinking Osiris and monitoring all cooking items for 5 minutes.

Check steak. It has been 20 minutes and should be ready to come off the grill and rest. Move brussel sprouts to non-used stove-top burner to congeal, add bacon, and stir.

Continue reduction for 5 minutes as steak rests. Drink remaining Osiris.

Plate steak and drizzle with reduction.

Plate sprouts, pour remaining Wee Muckle into glass, and enjoy!
