The seasons have changed and fall is upon us. It’s time to warm up our taste buds! Sun King’s resident chef, Dustin, shares his recipe for Spicy Roasted Pepitas. And for an added bonus: Homemade Vanilla Extract just in time for the holiday season and baking!
Spicy Roasted Pepitas
Seeds from 2-4 pumpkins
1 Tablespoon Olive Oil
2 Tablespoons Salt
1 Tablespoon Fresh Cracked Pepper
2 Teaspoons Cayenne Pepper (Optional)
Rinse the seeds and remove as much pulp as possible.
Move the seeds to a bowl and toss oil and seasonings.
Transfer to a sheet tray and roast in a 325* oven for 15-35 minutes.
Check and stir the seeds after 15 minutes to make sure they don’t burn.
Remove and cool.
Enjoy with a cold Osiris, or your favorite Pale Ale.
Homemade Vanilla Extract
7-11 ounce of Vodka, no need to waste money on expensive Vodka
5-10 Quality Vanilla Beans, split
Split the beans.
Place in a resealable jar.
Pour on Vodka.
Wait 4-6 weeks.
Shake the jar once a week.
