Cooking with Sun King Lupulin Astronaut Spicy Tofu Lettuce Wraps

We've all set on intentions for the year and our resolutions are underway. If one of your resolutions is to eat healthy, then you've got to try this recipe. Sun King's Culinary Director, Steven Unrue, wiped up a tasty eat that any vegetarian or meat lover will devour - Lupulin Astronaut Spicy Tofu Lettuce Wraps!

The tofu has a sweet, spicy, tangy failover that the IPA hops in the beer play well with. The sauce adds depth and a little sweetness. The herbs in the garnish tie it all together. We hope you enjoy!

 


 

Lupulin Astronaut Spicy Tofu Lettuce Wraps

 

Total Time: 30 min (Active Prep Time: 30 mins)

 

 

Servings: 4 

 

Ingredients

 

For the Tofu:

 

1 pound extra-firm tofu, sliced 3/4 inch thick

2 tablespoons vegetable oil

1 Fresno chile, thinly sliced

3 tablespoons soy sauce

2 tabelspoons mirin

2 tablespoons Sriracha or gothujang (Korean hot pepper paste)

2 tablespoons unseasoned rice vinegar

2 teaspoons toasted sesame oil 

1 teaspoon finely grated fresh ginger

 

For the Sauce:

 

4 tablespoons low-sodium soy sauce

4 tablespoons hoisin sauce

1 oz Lupulin Astronaut IPA

1 to 2 teaspoons vegetarian chile sauce, such as vegetarian sriracha 

 

To Serve: 

 

16 butter lettuce or iceberg lettuce leaves

1 English cucumber, diced

1/2 cup chopped green onions

1/2 cup chopped fresh Thai basil

1/2 cup finely chopped peanuts

 

Directions

 

For the Tofu:

 

Arrange tofu slices in a single layer on a paper towel lined plate and cover with a few more paper towels. Press down firmly on tofu with your hands to expel excess liquid. 

 

Heat vegetable oil in large skillet, preferably cast iron. Cook tofu, turning once, until browned. 7-10 minutes total. 

Transfer to plate and let cool.

 

Meanwhile, whisk chile, soy sauce, mirin, Sriracha, vinegar, sesame oil, and ginger in a medium bowl to combine. 

 

Crumble tofu into small pieces and add to bowl; toss to combine. 

 

For the Sauce: 

Mix soy sauce, hoisin, Lupulin Astronaut, and chili sauce until combine. 

 

To Serve: 

Place lettuce leaves on platter, and set out garnishes in small serving bowls. Let guests wrap tofu mixture in lettuce leaves, and top with their choice of garnishes and sauce. 

 

Pairs well with a pint or can of Lupulin Astronaut IPA.
