Cooking with Sun King: SKB IPA Let's Do Brunch Recipe

Sun King's Culinary Director, Steven Unrue, has prepared a three part series of recipes for the release of our year-round SKB IPA. We all know that you are supposed to eat three meals a day...Today's recipe is perfect for breakfast or brunch!

 


 

Bagels and Lox

Servings: 12 | Active Prep Time: 2 hrs | Total Time: Up to 3 Days

 

For the Bagels:

 

Starter Ingredients

 

1/2 cup unbleached bread flour

1/4 cup SKB IPA

Pinch instant yeast

 

Starter Directions

Combine the starter ingredients in a medium-sized bowl, cover, and let rest at room temperature overnight.

 

 

 

Dough Ingredients 

 

4 cups unbleached bread flour 

1 1/4 cups SKB IPA

1 3/4 teaspoons salt

1 1/2 teaspoons instant yeast

 

Topping Ingredients

1/4 cup everything bagel spice

 

Bagel Directions

 

1. To make the bagel dough:

 

The next day, combine the starter with all of the dough ingredients and knead by hand, mixer, or bread machine to form a smooth, stiff buy not dry dough. Place in a lightly greased bowl, cover, and set aside to rise for 1 hour.

 

Gently deflate the dough, and let it rise for another 30 minutes.

 

Transfer the dough to an unclouded work surface and divide it into 12 pieces. Roll each into a smooth ball. Cover the balls with plastic wrap and let them rest 30 minutes. They'll puff up very slightly.

 

While the dough is resting, prepare the water bath by heating the water and malt (or sugar) to a very gentle boil in a wide-diameter (about 10 inch) pan.

 

Preheat your oven to 450 Degrees F.

 

Water Bath Directions:

Fill 10 inch pan with about 2 inches deep of water. 

1 tablespoon non-diastatic malt powder or brown sugar.

 

2. To shape the bagels:

Use your index finger to poke a hold through the center of each ball, then twirl the dough on your finger to stretch the hole until it's about 2 inches in diameter (the entire bagel will be about 3 inches across). Place each bagel on a lightly or parchment-lined baking sheet, and repeat with the remaining pieces of dough.

 

3. To boil the bagels:

 

Transfer the bagels, three to four at a time if possible, to the simmering water. Increase the heat under the pan to bring the water back up to a gently simmering boil, if necessary. Cook the bagels for 2 minutes, flip them over, and cook 1 minute more. Using a skimmer or strainer, or the end of a wooden spoon, remove the bagels from the water and place them back on the baking sheet. Repeat with the remaining bagels.

 

4. To bake the bagels:

Bake the bagels for about 25 minutes, or until they're as deep brown as you like. To top with seeds, remove the bagels from the oven after about 15 minutes, spray with water, and sprinkle with the seeds. Return to the oven to finish.

 

5. Remove the bagels from the oven and cool completely on a cooling rack.

 

For the Lox:

 

Lox Ingredients

 

1 tablespoon coriander, crushed

1 teaspoon crushed red pepper

1/3 cup kosher salt

1/3 cup sugar

2-pound center-cut salmon fillet, skin on, cut in half crosswise

1 bunch fresh cilantro

3 tablespoons SKB IPA

 

Lox Directions

 

In a small bowl, combine the salt, sugar, coriander and red pepper.

 

Line a baking dish with a large sheet of foil, leaving a few inches of overhang, and top with a piece of plastic wrap the same size. Place one piece of the salmon, skin-side down, in the dish; cover the fish evenly with the salt-sugar mixture, patting it down lightly.

 

Lay the cilantro over the salmon and sprinkle with the SKB IPA. Top with the remaining piece of salmon, skin-side up, and with the thickest area of the top piece matched to the thinnest area of the bottom piece. Wrap tightly in the plastic wrap, then again in the foil; top with another backing dish, and weigh down with a few heavy cans. Refrigerate for 3 days, turning the salmon every 12 hours, basting between the fillets with the accumulated juices each time.

 

When ready to serve, use a paper towel to scrape the cilantro and seasonings from the salmon. Transfer the salmon to a cutting board, and using a long, sharp knife held almost parallel to the board, slice diagonally to remove the skin. The gravlax can be refrigerated, tightly wrapped, for up to a week, or frozen for a month.

 

Final Serving Ingredients

 

Creme fraiche

Sliced Red Onion

Capers
Sliced Cucumber Coins

 

To Serve

 

Halve fresh bagels, spread each half with creme fraiche, layer lox, red onion, cucumber, and top with capers. Enjoy!

Hoosier Environmental Council is the voice of the people for the environment in Indiana. In 2018, we are celebrating 35 years of advocating for cleaner air, pristine rivers and lakes, healthier communities, thriving wildlife, and more abundant forests in Indiana.

 

You will find HEC at the Statehouse advocating for stronger environmental protections in our state or at a park along the free-flowing White River observing native bird species – and anywhere in between. April is known as Earth Month and you’ll find HEC all around Indiana educating Hoosiers about ways to be better environmental stewards. Check out our Calendar of Events to see when HEC will be near you.

Of course, we’re especially excited about spending time with you at Sun King Brewing in April. Join us on April 5 to learn more about composting from Earth Mama Compost – and take home a bag of compost that includes Sun King spent grains. Then, as part of Aveda Earth Month, you won’t want to miss getting a chair massage or hand treatment (by donation) from Evan Todd Salon & Spa on April 26.

 

It’s opportunities like these (among many other things!) that make us so grateful for our partnership with Sun King. Standing up for clean energy, sustainable agriculture, clean air and water, wildlife and their habitats, and environmental justice isn’t always a glamorous job. Doing it at a brewery gives us a chance to have some fun and meet cool people like you.

Mounds Greenway

One of HEC’s initiatives is the Mounds Greenway, a sustainable plan to conserve the free-flowing West Fork White River and its floodplain forests, wetlands and other natural communities. The result will be a high quality linear park following the river, creating a regional trail network connecting Muncie to Anderson, and eventually to Indianapolis. Check the HEC calendar for ways to learn more and explore.

 

HEC Green Business

Our partnership with Sun King started three years ago when we launched the HEC Green Business program. We carefully vet our HECGreenBiz partners to ensure that they share in our mission to help make Indiana a healthier, better place to live and do business. Sun King’s commitment to the Indianapolis community and to enriching the lives of Hoosiers makes them an important part of the sustainability movement in our state.

8th Annual Bike to the Ballpark w/ Indianapolis Indians on April 6th

Eight years ago we kicked off our very first Bike to the Ballpark for the Indianapolis Indians opener at Victory Field!

 

A few new things are happening during this year's event.  First and foremost - the event will take place on a FRIDAY! Sun King will be hosting a pre-party celebration at our downtown Indy brewery location from 3pm-7pm.  All-ages are welcome to the free celebration. Indy's Mayor Joe Hogsett will continue the tradition of riding through downtown Indy to Victory Field for the Indians season opener against the Columbus Clippers.  


We've scheduled two rides to Victory Field.  Although both rides are SOLD OUT, we do have a waiting list.  If you are interested in being placed on the waiting list, we ask that you register through IndyCog here: https://tinyurl.com/B2TB2018.  ALL participants MUST register before they ride.

 

IndyCog will provide valet bike parking in a designated location inside Victory Field, while you enjoy the game. Bike parking will end promptly at 10pm.

 

DJ Mr. Kinetik will be kicking off the party by spinning tunes at 3pm. Grab some grub from Bub's Burgers & Ice CreamNacho Mama's Food Truck • Johnson's BBQ. March is Red Cross Month

When you think of the American Red Cross, what do you think of? Do you think emergency preparedness plans? Disaster relief? CPR training? Installing and testing smoke alarms? Blood drives? If you answered yes to any of those questions you are right, the Red Cross does all that and so much more!

 

The truth is, not many people really think about the Red Cross until they need help. But the Red Cross is constantly working, training and getting ready every day to act when you need them most - in a time of disaster. As one of our Community Partners, Sun King works closely with our friends at our Indiana Red Cross chapter. We love what they do so much we made March Red Cross month at Sun King! Instead of taking tips in our tap rooms downtown or in Fishers, our staff donates every penny to organizations we feel are doing the best work in Indianapolis. For all of March, our tip jar donations from our downtown and Fishers tasting rooms go directly to the Red Cross. On Community Give Back Thursdays, we donate $1 from every growler fill to the Red Cross. We even hosted a blood drive on at our brewery to kick the month off!

 


 

With the unseasonal amount of flooding occurring in Northern Indiana, the Indiana Red Cross has been crucial in the relief and rebuilding efforts of these Hoosier communities. Due to their increased need and focus on the flooding in Northern Indiana, the Red Cross has been stretched thin and is in desperate need of blood and resources. Sun King Downtown Indy Now Family Friendly

Family Friendly SKB Indy

 


 

The discussion about going family friendly dates back to when we opened our Fishers Tap Room in 2015. We felt it was important to open that location as a family friendly destination because of the community that surrounds it, but when it came to our downtown location it wasn't such as simple... There were strong opinions on both sides of this issue and over the last year there has been a healthy and ongoing debate at our weekly leadership team meetings, but at the end of it all we decided family friendly was the right move for us. Many members of the Sun King Crew have families and want the ability to gather with friends in order to share the fruits of their labor, plus a lot of our earliest adopters were young people who have gone on to start families and could no longer visit our Indianapolis Tap Room. And finally, with our Carmel Distillery and Tap Room slated to open this summer and be family friendly, our Downtown Indianapolis Tap Room would be the outlier and our only location that wasn't family friendly, which we felt would be confusing.

 


 

Anyone who has been coming to Sun King's Downtown Indianapolis Tap Room over the last 8+ years knows that the one thing you can count on is change. It all started with 12 taps, a few picnic tables, and people enjoying 3-ounce samples of beer and buying growlers to go. Over the years we have continued to invest in upgrades and change the way we operate in order to create a more enjoyable environment that now features 38 rotating taps, upgraded furniture, and the opportunity to enjoy a pint of beer while sitting adjacent to our brewery. Last year we undertook a complete refresh that was centered around the addition of OCA, a delicious food kiosk operated by the people who from Goose the Market and Smoking Goose. Now our guests can enjoy food and beer together at Indy's original Tap Room, something that was unthinkable only a few years ago!

 


 

Our latest move to become family friendly is simply another step in our continual evolution, and we couldn't be happier about it. Breweries across the country are gathering places for community, and kids are a part of our community.
