I like to think that we’re thankful everyday for the successes we’ve had and the growing number of people who love what we do here at Sun King, but in order to remind our staff, and more importantly our customers, we are taking the entire month of February to do so!

It was eight years ago in February that we dismantled and extracted our original brewing system from a warehouse in Portland, Maine, loaded it onto four semi trailers and shipped to its new home at 135 N. College Avenue. At the time we were hopeful, nervous, and excited about the possibilities… Our goals were modest and genuine; Open a brewery so that we could do what we love, create a workplace that people could be themselves and thrive in, make great beer, and become Indianapolis’s brewery. Everyone always asks if we thought it would go this well or grow to this size and the honest answer is; No. This entire thing is beyond our wildest dreams ten years ago.

We couldn’t and wouldn’t be where we are without the passionate support of so many great people! Early on we asked everyone that we served in our tasting room and met at events to ask for our beer in bars and restaurants and they did, which in turn helped us land placements in bars, restaurants and liquor stores all over greater Indianapolis. Everyone who has championed our cause helped pave the way for our continually expansion and growth and we’d like to say thank you, Thank You, THANK YOU the entire month of February.

Starting on the first we’ll have weekly specials on practically everything, but my favorite, and most likely all of yours, is that we brewed a FRESH BATCH of GRAPEFRUIT JUNGLE! GFJ is the first beer we ever brewed that sold out in a day and has become our most highly anticipated seasonal beer, released every year at our anniversary party in June. We managed to score some additional hops and decided to brew a small batch that will only be available in our Tasting Rooms for pints and growler fills. Sorry, no cans until this summer.

We’re also going back to our roots with Throwback Thursday, where growler fills of our House Beers are only $5.00. It was Growler Fill Friday that helped establish us as Indianapolis’s brewery and brought people from all walks of life to the Tasting Room on Fridays to sample beer and buy copious amounts of growlers to share with friends over the weekend and thus spread the good word of Fresh•Local•Beer. And since Growler Fill Friday still happens every week, although the price has gone up a dollar, we thought we’d bring back Indy’s best ever price beer on Thursdays.

There’s a full graphic of what’s happening (find out what's happening here) and when so that you can find opportunities to save money on beer and Sun King swag, plus we’ll be having a whole lot of random fun in the Tasting Room throughout the month. If you haven’t visited for a while, it’s worth a trip in because just like always things are growing and changing right before your eyes. We currently and always have at least 12 beers on tap for you to try and unlike the old days, you can actually sit and enjoy a full glass of beer, not just a sample in a tiny cup.

Stop by our original location Downtown, or our Small Batch Brewery in Fishers so we can say thank you in person. We truly appreciate the love and support we feel from our customers and fans of Fresh•Local•Beer. We couldn’t do it without you!

Baking with Sun King: Ring of Dingle Chocolate Pie

Monday, January 23, 2017

It's National Pie Day!

To celebrate Chef Steven Unrue whipped up a delicious chocolate pie using Ring of Dingle Dry Irish Stout.

Ring of Dingle Chocolate Pie

10 Servings / 30 Min Active Prep TIme / 4 Hours Total Time

• Pie Crust:

2 cups chocolate wafer cookies (about 1 ½ cups of crumbs)

3 Tbs sugar

5 Tbs melted butter

• Chocolate Ganache Layer:

8 oz dark chocolate

1/3 cup Ring of Dingle

3 Tbs heavy cream

• Stout Moose Layer:

10 oz dark chocolate

1/2 cup Ring of Dingle

3 cups heavy cream, chilled

¼ cup powdered sugar

• Whipped Cream Layer:

8 oz cream cheese, softened

¾ cup powdered sugar

2 cup heavy cream, chilled

1 tsp vanilla extract

• Pie Crust:

Preheat oven 350 degrees

Add the wafer cookies and sugar to a food processor and process until just crumbs. While the food processor is running add the melted butter and process until well combined. Add to a deep dish 9.5 inch pie pan. Starting with the sides, press into shape. Press the crust very well until even and compacted.

Bake at 350 for 10 minutes.

Remove from oven and allow to cool.

  • • Chocolate Ganache Layer:
  • Add the chocolate to a small bowl.

Heat the Ring of Dingle and cream together until very hot and just starting to steam (microwave or stove top will both work fine). Pour hot liquid over the chocolate and stir until the chocolate has melted and is well combined with the stout and cream. Pour in an even layer in the bottom of the crust. Refrigerate until set, about 30 minutes.

    • Stout Moose Layer:

Add the chocolate to a small bowl. Heat the Ring of Dingle until very hot and just starting to steam (microwave or stove top will both work fine). Pour hot beer over the chocolate and stir until the chocolate has melted and is well combined with the stout. Allow to cool to room temperate. In the bowl of a stand mixer add the cream and powdered sugar, building up speed beat on high until medium peaks form. While the mixer is running slowly drizzle the chocolate into the mixer. Once all the chocolate has been added, stop the mixer and remove the bowl. Using a wooden spoon or spatula gently fold until the chocolate and cream have been well combined.

Add the mousse to the pie crust in an even layer, refrigerate until set, about 3 hours.

    • Whipped Cream Layer:

In the bowl of a stand mixer beat the cream cheese and powdered sugar until well combined. Add the heavy cream and vanilla, beat on high until medium peaks form. Spread in an even layer on top of the pie. Chill until ready to serve.

    Community Partner Spotlight: Zoolala

    Thursday, January 19, 2017

    • Zoolala 2017: Party Like A King

One of Indy’s most fabulous young professional fundraising events—Zoolala—will celebrate its fifth year on Saturday, Jan. 28. Since 2013, young philanthropists have raised more than $200,000 by partying for a purpose.

Emerging community leaders founded the Indy Zoo Council in 2012 as an opportunity for young professionals to connect with and support the Zoo’s mission of empowering people and communities, both locally and globally, to advance animal conservation. The inaugural event was a sellout and quickly became a staple fundraising event for the Zoo.

This year guests will receive the royal treatment at Zoolala 2017: Party Like A King. Guests at the sold-out VIP party will kick off the evening in the Zoo’s Oceans building, the only place guests will have the opportunity to see the inspiration for this year’s theme: the king penguin. VIP ticket holders will also be able to learn about the unique challenges penguins face in the wild and how Zookeepers care for the penguins that call the Indianapolis Zoo home.

The main event will take place in the Dolphin Gallery, featuring live music from the Julia Kahn Band and Indianapolis’s own DJ Lockstar; delectable food from local favorites Nada and Four Day Ray Brewing; beer compliments of Sun King Brewing; and a full, open bar. Surrounded by the Zoo’s playful Atlantic bottlenose dolphins, guests will have the opportunity to get the ultimate selfie all the while remembering the true purpose of the party — animal conservation.

All proceeds from Zoolala go directly back to the Indianapolis Zoo. Feeding the 1,300 beaks, mouths, trunks and bills at the Indianapolis Zoo costs almost $400,000 a year, and Zoolala helps to offset those costs. Because the Zoo receives no direct tax revenue, fundraising events such as Zoolala are vital to the continued growth of the Zoo and the Indianapolis community.

In addition, funds raised also go toward the many grants that the Zoo gives out annually to animal organizations around the world. Conservation is at the core of the Indianapolis Zoo’s work, whether in the local community or thousands of miles away. The Zoo is committed to supporting many different organizations, researchers and scientists whose work is helping preserve wild things and wild places for future generations to marvel.

Over the years, animals from the savanna to the sea have benefitted from the Zoo’s involvement in these initiatives, including elephants, tigers, macaws and many more. And in 2017, funds are heading in some new directions, too. That includes organizations such as the Amur Tiger Conservation Project, Cheetah Conservation Fund, Kutai Orangutan Project and the Tarangire Elephant Project. Because of the support of the Indy Zoo Council, Zoolala is able to impact conservation worldwide.

Interested in supporting the Indianapolis Zoo by partying like a king? A few General Admission tickets remain and can be purchased online here. Get them before they’re gone!

The Indy Zoo Council is open to all young professionals in Central Indiana. For more information on how to join, contact Betsy Busald, Indy Zoo Council liaison, at or 317-630-2025.
